Hey Tigers! I hope you all are hanging in there during this time. As college students, one thing that has remained constant is our love, need, and desire for food. Home-cooked meals are nice, but I’m sure none of us expected these meals to last any longer than Spring Break.
With restaurants closing and busy drive-thrus, it can be hard to get some of the quick meals that we all crave. Thankfully, we’ve got five recipes that anyone can make in the comfort of their own home. Some of us already have these classic ingredients, but if you’re planning a grocery run, make sure to add these items to your list!
1. Ramen Stir Fry
Ramen has been the staple college meal for decades, but few know its capacity as a gourmet dish. Most of us have packs of ramen hiding deep in our pantries, so this recipe could come in handy if you think there is absolutely nothing left to eat. In a time where so much emphasis is placed on mental, physical, and emotional self-improvement, why not extend this idea to your ramen?
The following recipe is brought to us by Inquiring Chef: https://inquiringchef.com/20-minute-chicken-ramen-stir-fry/.
2. Chewy Chocolate Chip Granola Bars
Sometimes waking up in the morning and eating cereal can get a little boring. Even switching things up and adding granola to yogurt can be repetitive. But have you thought about making granola bars? This is a fun and creative way to use that old cereal and granola in an innovative and tasty way!
Shoutout to Pro Recipe Developer Lauren from Lauren’s Latest for this awesome recipe: https://laurenslatest.com/no-bake-chocolate-chip-granola-bars-easy-healthy/.
3. Grilled Cheese/Tomato “Soup”
Nothing screams “homemade” like a classic grilled cheese sandwich. Ok, I admit that a bit of my inspiration comes from the wonderful chefs at Rollins Dining Hall, but nevertheless, the final product is spectacular. Not only is this a super quick and easy meal, but it is also a great way to remind you of the good-ole days as a kid when Mom would whip up a grilled cheese for lunch.
This amazing recipe has a 4.89-star rating, so let’s pretend the 2.2% of unhappy people don’t exist: https://www.spendwithpennies.com/the-best-grilled-cheese-sandwich/.
If you don’t want a full side of soup, put a bit of ketchup in a bowl, put the bowl in the microwave for no longer than 30 seconds, and use it as a dip for your sandwich! Trust me, it’s amazing. Some people even like to keep the ketchup cold to contrast with the steamy sandwich. It’s your choice, just have fun!
4. Iced Coffee
I am more of a hot chocolate girl myself, but I know that coffee lovers are very serious about their craft. This recipe will let you indulge in a Starbucks-quality drink, without the Starbucks line or price. There are nothing but good reviews for this recipe: https://damndelicious.net/2015/07/08/perfect-iced-coffee/.
5. Strawberry Lemonade
Social distancing means no backyard parties. But who says we can’t still enjoy a nice sunny day with our friends? It’s 2020, people! Launch a Zoom call, grab some shades, put a lawn chair outside, and sip a delicious fruity drink!
Why strawberry lemonade, you ask? Why not emulate the queen of summertime and pink herself: Sharpay Evans! #fabulous
Seriously though, yummy doesn’t even begin to describe this easy, refreshing homemade recipe: https://www.spendwithpennies.com/fresh-strawberry-lemonade/.
I hope this was enough to satisfy your hunger, quench your thirst, or even inspire you to explore even more recipes! Hang in there, stay safe, and Fight Tiger!
